Picked long before maturity, green peppercorns are much less pungent than black peppercorns and have a pleasantly fresh, herbaceous flavor. A featured spice in pepper steak sauce, green peppercorns are also used in French, Creole and Thai recipes. They are also excellent on fish and in other sauces.
