Baked Feta


8 oz block of quality feta cheese

½ cup grape tomatoes, halved

1 small red onion thinly, sliced

1 garlic clove, sliced

8 mini sweet bell peppers, cored & sliced

3 tablespoons Extra Virgin Olive Oil

3 to 4 fresh thyme sprigs

8-10 greek olive cured olives

½ teaspoon of The Spice Apothecary's Diablo, optional


Heat oven to 400 degrees F

Arrange the onions, sweet bell peppers, tomatoes & olives in an oven-safe dish. Combine the Gyro Seasoning with the olive oil. Drizzle the vegetables with some of the seasoned olive oil.

Add the feta on top of the veggies, add the thyme sprigs & pour the remaining seasoned oil over the cheese & veggies. Sprinkle with Diablo Spice if desired.

Place the baking dish on the middle rack of the oven and bake for 30 minutes, broil for 2 minutes to slightly brown.

Serve with pita chips, crackers or a crusty baguette.
