Coconut Shrimp with Sweet Heat Diablo Dipping Sauce

Crispy Coconut Shrimp baked or air fried until golden and served with a sweet and spicy orange Diablo dipping sauce. An easy appetizer or dinner recipe packed with bold flavor.

Ingredients for Coconut Shrimp with Sweet Heat Diablo Dipping Sauce
2 pounds of peeled and deveined jumbo shrimp (tails left on)
3/4 cup of flour
3 eggs whisked (for the egg wash)
1 cup of panko (Japanese breadcrumbs)
1 1/2 cups of shredded coconut
1 Tablespoon The Spice Apothecary’s Garlic Herb Blend, divided
For the dipping sauce
1 1/2 cups of orange marmalade
1 tablespoon of Dijon mustard
1 - 2 teaspoons The Spice Apothecary’s Diablo (depending upon heat level desired)
Directions
Sprinkle the shrimp with half of the Garlic Herb Blend and a pinch of kosher salt. (Garlic Herb Blend is salt-free).
Set up a sheet pan as a prepping station with 3 bowls.
Bowl #1: 3/4 cups of flour
Bowl #2: 3 eggs whisked for egg wash
Bowl #3: 1 cup of panko, remaining Garlic Herb Blend and 1 1/2 cups of shredded coconut.
Dredge the shrimp in the flour first, then the egg wash and then the panko mixture. The coconut is sticky so it is easy to pack on. Place them on a sheet pan coated with cooking spray.
Oven directions:
Preheat your oven to 400 F. Place the shrimp in and cook for 4 minutes. Flip them and cook another 2-3 minutes or until the skin is pink and the flesh is opaque. You can put under the broiler on for 1 additional minute to brown the coconut if you prefer, but keep an eye on them. Remove from the oven, sprinkle with kosher salt and set aside.
Air fryer directions:
Preheat air fryer to 375 F. Spray basket with cooking oil, add shrimp in batches so they are one layer, spray with cooking oil. Cook 4 minutes, flip, spray with cooking oil and cook for 4 more minutes, depending upon the size of your shrimp. Remove from the air fryer, sprinkle with kosher salt and set aside.
In a pot combine 1 1/2 cups of orange marmalade, 1 tablespoon of Dijon mustard and 1 - 2 teaspoons of Diablo Spice. Simmer and stir until incorporated. Remove from heat and let cool slightly. Place the shrimp on a platter with the dipping sauce and serve.
