Gyro Loaf



Ingredients

3 pounds of ground meat (lamb, turkey, pork, whatever you like best or a mixture)

3 eggs

1 cup of plain breadcrumbs (plus more if needed)

2 tablespoons of Gyro Seasoning

10 ounces of frozen spinach (thawed and drained well)

3 garlic cloves

1/2 cup of fresh parsley

2 teaspoons of kosher salt and ground black pepper


For serving:

warmed flatbread

tomatoes

cucumbers

raw onions


Directions


Place 3 pounds of ground meat in a large bowl. To the bowl add 1 cup of plain bread crumbs, 10 ounces of frozen spinach (thawed and drained well), 2 tablespoons of Gyro Seasoning, 2 teaspoons of kosher salt and ground black pepper

Put 3 garlic cloves and 1/2 cup of fresh parsley in a food processor and chop finely. Add them to the meat as well. Whisk the eggs and pour them in next

Using your hands gently mix all ingredients together. Spray a roasting pan with some cooking oil. Drop the meat mixture into the pan and form into a loaf. Place in the oven and cook for 1 hour

After an hour remove the loaf from the oven and place on a cutting board. Allow it to rest for at least 10 minutes before slicing. Slice the loaf thinly

Add 2 slices of Gyro to a flatbread, then top with Tzatziki, tomato, cucumber and onion Fold the flatbread sides in and wrap with some wax paper. Serve with some extra Tzatziki sauce
