This homemade Bird's the Word Compound Butter recipe is easy to make and will ensure that your chicken or turkey will have crispy skin and moist meat throughout.
Ingredients for Bird's the Word Compound Butter
Unsalted, softened butter - amount depends on the size of your bird
For a 10-12 pound bird, soften a stick of unsalted butter and combine with 2 tablespoons of Bird's the Word seasoning.
Have a bigger bird?
Use 2 sticks of softened butter and 4 tablespoons of Bird's the Word.
Add the compound butter to a sheet of waxed paper and roll up like a log.
Chill for at least 2 hours then slice into desired size medallions.
Make ahead: compound butter freezes well just make sure to completely thaw before use.
To prep the poultry, let sit at room temperature for an hour before roasting and pat dry with paper towels.
Lift the skin over the breast meat being careful to leave the skin attached to the center of the breastbone.​
Rub the compound butter over the breast meat under skin and massage it down toward the front of the bird. Spread over all of the outside skin.
Discard any leftover compound butter that has come into contact with the raw meat.
