Pumpkin Pecan Bread

Ingredients

3 large eggs

1½ cups pumpkin puree

⅔ cup canola oil

1 cup sugar

½ cup packed brown sugar

2 teaspoons vanilla

3 teaspoons The Spice Apothecary Pumpkin Spice

1 teaspoon baking soda

1 teaspoon baking powder

1½ cups all-purpose flour

½ cup of pecan halves

Preheat oven to 350ºF


Spray a 9x5-inch loaf pan with cooking spray. Place eggs in a medium-large bowl and whisk well.


Add pumpkin puree, oil, white & brown sugars & vanilla. Stir well.


Stir in the Pumpkin Spice, baking soda, baking powder.

Incorporate the flour & gently mix until combined.


Transfer batter to prepared pan. Top with pecan halves.


Bake for 55-65 minutes. Check the bread at around 40-45 minutes and tent with foil if browning too quickly. Remove when a tester comes out clean.


Cool completely and enjoy!
