This crisp Asian Cucumber Salad is made with tender cucumbers marinated in a simple Asian dressing and seasoned with Everything Blend or Furikake.

Ingredients for the Asian Cucumber Salad
6 mini or 1 large Persian cucumber
1 tablespoon kosher salt (for cucumber prep)
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
1 teaspoon of Everything Blend Or Furikake (Japanese nori seaweed forward-style blend)
1 teaspoon honey
3-4 drops sesame oil
Chili flakes if desired
Directions
Thinly slice the cucumbers and place in a colander. Sprinkle with the kosher salt and let sit over a drain for 20-30 minutes. Rinse well with cold water & lightly pat dry.
Mix remaining ingredients in serving bowl and add in the cucumbers.
Chill for at least 30 minutes before serving the cucumber salad.
Asian Cucumber Salad pairs especially well with grilled chicken, seafood, or skewered dishes like Chicken Satay, where the cool cucumbers balance warm spices beautifully.
