Roasted Delicata Squash

Sweet, tender, and caramelized to perfection, this Roasted Delicata Squash is a cozy fall favorite. Roasted with olive oil and our seasonings, it’s simple to make and full of warm, nutty flavor, and makes the perfect side for any meal.

Ingredients for Roasted Delicata Squash:


2 medium delicata squash

2 tbsp olive oil

1 tsp salt

½ tsp black pepper

1 tablespoon of The Spice Apothecary seasoning (choose one that matches your meal’s flavor profile:

  • Garlic Herb Spice - roasted garlic forward

  • A Taste of Tuscany - rosemary forward

  • The Spaniard - smoky undertones

  • Shawarma or Za’atar - for a Middle Eastern flair.

  • Garam Masala or Curry - warm spice notes


Instructions:


  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper, add a light coating of olive oil spray.

  • Wash the squash, no need to peel.  The skin is tender and edible. Cut each squash into ½-inch slices and remove the seeds.

  • In a large bowl, toss the squash slices with olive oil, salt, pepper, and The Spice Apothecary seasoning of your choice.

  • Arrange slices in a single layer on the baking sheet. Roast for 25–30 minutes, flipping halfway, until golden brown and caramelized on the edges.
